Lalbaba Classic Kolkata-Style Chicken Biryani

Why Lalbaba Basmati Steam?

Because it doesn’t retain extra moisture, each grain stays separate — perfect for layered dum cooking.

Ingredients:

2 cups Lalbaba Basmati Steam Rice

500g chicken (medium pieces)

2 potatoes (halved & fried)

1 boiled egg (optional)

1 cup curd

Ginger-garlic paste

Biryani masala, whole spices

Saffron milk or kewra water

Ghee & oil

Method:

1. Wash and boil rice uncovered till 80% done. Drain and set aside.

2. Marinate chicken with curd, spices, and salt (1 hour).

3. Cook chicken till 70% done.

4. Layer rice + chicken + potato + saffron milk.

5. Cover tightly and cook on dum (low flame) 20 minutes.

6. Rest for 10 minutes and fluff gently.
